As wine growing goes, the cultivation of Pinot Noir is about as high maintenance as it gets, with thin skins and a delicate disposition, the grape is definitely the "diva"  grape of the industry.I reckon that to make a good Pinot, you have to possess the patience of Job, the skill of Michelangelo and the bank balance of a previously wealthy man...

Mornington has certainly graduated from being a sleepy seaside wine area where weekend wine warriors would trawl through a variety of mom-and-pop cellar door operations, to becoming what is now a region which is recognised globally as the producer of some of most fantastic Pinot and Chardonnay (Red and White Burgundy) in the New World.

10 Minutes

Ten Minutes by Tractor is the product of four Mornington vineyards, and the hard work of a bloke by the name of Martin Spedding. Aside from the cult status that this wine has developed amongst the Melbourne dress circle, it was when James Halliday recognised this winery with 5 stars a year or two ago that things really started cooking with gas for Martin.

He is totally into the notion of organic production and the use of wild yeasts. (No bio-genetic yeasts cooked up in a lab for these puppies). The results are fantastic unfiltered Pinot that is raising eyebrows everywhere.

I have listed the wines along with the James Halliday ratings:-

Wallis Chardonnay 2007 - (JH 94 - 5 Stars)          -  $68
Wallis Pinot  2007 - (JH 95 - 5 Stars)                    - $80
