Whole berry fermented as is the wont at this address, helping to facilitate the notable culture of minimal additions at the end of it all. Thereafter, 18 months in larger and smaller used French wood. This is delicious maritime cabernet Easy going, mind you. Far from a behemoth, or a wine than needs extensive cellaring. Sage and bay leaf notes, offsetting olive, blackcurrant and other dark fruits. The oak is well nestled, providing a framework rather than a forcefield. Long and succulent. Ned Goodwin MW Published 01 August 2020 COLOUR Deep ruby red BOUQUET Blackcurrant, a touch of dried herbs and a hint of black truffle. PALATE An abundance of blackcurrant and cassis carry the palate, some earthy notes and spice woven in. Firm, lengthing tannins finish it off nicely. WINERY NOTE: The fruit for the Hedonist Cabernet is grown biodynamically on our own vineyard situated in the Willunga foothills, McLaren Vale. Warm Summer days are cooled by evening sea breezes from the gulf, which lies a close proximity to the West. The soil is rich loam over clay with patches of underlying limestone, giving the wine a rich and fullness of pallet. #Hedonist
