“From a single parcel of vines, planted in 1853 in
Springton in the Eden Valley, this has a strikingly
complex and fragrant nose with pepper, wild sage, gun
flint, rose petals, pastry and orange peel, as well as
redcurrants, raspberries, blueberries and red cherries.
The palate has such fine, silky and elegant tannins that
draw very long and chiseled. Raspberry and red-cherry
flavors are cradled long, fresh and fine. Elegance and
power. Superb grenache. Drink or hold. Screw cap.”

Luckily, we have access to very small parcels of fruit from old, dry-grown, hand-
pruned/picked vineyards. I decided that making a Grenache the way Barossan
families made table wines many generations ago would honour the years of back-
breaking work required for keeping the vineyards feasible and sustainable. Green
harvested before veraison by 50% and shoot thinned to ensure ultimate quality of the
grapes at time of harvest. Split hand-picked at 14% and 15% potential alcohol over a
week. 15% whole-bunch, no crushing or temperature control, natural yeasts, hand
plunged and foot trodden twice daily for 3 weeks. Racked once during elevage of 12
months in 20 year old foudre (2250L) and a small addition of old vine Mataro for
balance. Bottled unfined and unfiltered under stelvin capsule.
