Alcoholic fermentation at 27oC with selected yeasts, with a period of 18days to obtain a good concentration. For this wine, only the bleeding (drop by drop) wine is used. Schiava is the local native red grape grown in the region for over a thousand years. This example comes from vones of 20 to 50 years of age. In Reneissance Florence, Spezieri where the blenders of spices. This wine is named after this ancient art of blending as it is composed of Sangiovese laced with another traditional Tuscan grape by the name of Ciliegiolo as well as small amounts of most of the other grape varieties grown on the Col d’Orcia estate. Spezieri is a young, fruity easy to drink wine for the everyday dinner table. Because of its composition it is a very versatile wine in terms of food pairing and also a red wine we recommend to try chilled in summer.

The Monastrell red 2021 Depaula comes from vines at 700 meters in altitude on very poor soils, and sometimes the grapes don't ripen properly; but that was not the case in 2021, when the vines had enough water to ripen all the grapes thoroughly and produced a wine with very pure varietal character.
