WINEMAKER'S COMMENTS

For generations known colloquially as ‘Claret’, the blend of Cabernet Sauvignon and Shiraz together highlights the varieties' complementary characteristics. Cabernet for classic tannin structure and bramble berry aromatics, whilst Shiraz carries fruit depth, spice and ripeness.

'No. EC4' was vinified through the historic 1888 Gravity Cellar. Built into the hillside on a series of terraces, gravity guides the flow of fruit down through the winery to deliver gentle extraction of colour, flavour and tannin. Both varietals were matured separately in French oak hogsheads, (30% new, 70% seasoned). Bench blend trials were then conducted by the Seppeltsfield winemaking team, prior to assemblage and bottling. Final blend: 53% Cabernet Sauvignon, 47% Shiraz.
