In the mouth it is complex, citric, spicy, oily, persistent, saline with good acidity”. GRAPE VARIETIES 90% Viura, 10% Malvasia. From our best plots we selected 200 Monges Reserva Blanco. Grapes harvested by hand. In the Winery we make another selection of clusters, we deposit them in a wooden vat once they have been crushed and 48 hours later we remove the unpressed flower must to ferment and age together with its fine lees.

Only few Chardonnays in Spain can aged for long time as reserva and stay fresh, balanced and elegant. Thanks to our location at Monjardín Valley, we are able to make this style of wines. La Rellanada Vineyard Located just infront of the winery, planted in 1988 it has always grown very high quality grapes. At an altitude of 650 m, we harvest in October, when grapes are golden colour. Yield is low which brings high concentration, fantastic acidity and rich texture. Winemaking and Aging Harvested at night with cold temperature, we do skin maceration for 12 hours before pressing.
