We have scoured the Italian landscape looking for the best truffle paste we could find. (Nothing is as good as fresh but unfortunately they are seasonal and often unattainable.) Most pestos have a black truffle content of 5% or less, and the list of artificial ingrdients added can be quite confronting. Don't look too closely at the ingredients list on the jars in your local supermarket, you might feel ill. We finally settled on this fine product from the Giuliano family in Umbria. It is head and shoulders above competing products we. have seen in Singapore. No comparison really nothing else even comes close. No artificial ingredients....
Truffles
STORAGE TERMS AND CONDITIONS: 1 - They are best eaten as quickly as you get them; 2 - Keep as dry as possible at all times; 3 - Replace paper towels used to wrap the truffles daily; 4 - Chefs recommend storing in the fridge in an air tight container with either rice or raw eggs. These will absorb the flavour and make amazing dishes all on their own later; 5 - Use a decent shaver to get the most out of them and don't serve too cold. They need to fuse with hot food to get the most out of them; 6 - The farmer reckons that they will freeze fine too. If you do freeze them don`t defrost just shave onto the pasta frozen and la viva loca will take care of the rest...
