We have scoured the Italian landscape looking for the best truffle paste we could find. (Nothing is as good as fresh but unfortunately they are seasonal and often unattainable.) Most pestos have a black truffle content of 5% or less, and the list of artificial ingrdients added can be quite confronting. Don't look too closely at the ingredients list on the jars in your local supermarket, you might feel ill. We finally settled on this fine product from the Giuliano family in Umbria. It is head and shoulders above competing products we. have seen in Singapore. No comparison really nothing else even comes close. No artificial ingredients....

There is slightly more austerity here than in many Barossa offerings, as one would expect. Notes of blackberries, cigar box, aniseed, leather, coffee grinds, dry herbs and figs with a fine line of acidity. The palate is rich and long with firm and ever-so-slightly grainy tannins while more chocolate notes emerge on the palate. Terrific drinking for the next 12 to 20 years.  #GREN

Winemaker's Notes We hand picked and whole bunch pressed each block separately before vinifying as Individual lots. Fermentations were long and quite cool between 14 and 16 degrees. Judiciously selected noble Botrytis bunches were Included at between 5 and 10% of the overall fruit selection. Lots were blended together after five months on yeast lees, before estate bottling without fining. Lime blossom, peach and red apple on the nose with a long, flavoursome palate of honeydew, pink grapefruit and quince.
