The key features of the 2021 season were cooler than average temperatures and almost exactly average rainfall with only 23 mm in the ripening month of March. It ticks all the boxes for us....lifted aromatics, good acidity, full flavoured with a long, refreshing dry finish. Hard to beat. Tasting notes The colour is intense straw yellow with greenish reflexes. The bouquet is reminiscent of exotic fruits, matured peers, hawthorn and acacia honey. In the mouth it is warm, velvety, soft and ripe with a nice acidity level, giving the wine freshness and a long lasting aftertaste.    

We have scoured the Italian landscape looking for the best truffle paste we could find. (Nothing is as good as fresh but unfortunately they are seasonal and often unattainable.) Most pestos have a black truffle content of 5% or less, and the list of artificial ingrdients added can be quite confronting. Don't look too closely at the ingredients list on the jars in your local supermarket, you might feel ill. We finally settled on this fine product from the Giuliano family in Umbria. It is head and shoulders above competing products we. have seen in Singapore. No comparison really nothing else even comes close. No artificial ingredients....

Comes off some pretty old, ungrafted Barossa vines. It's a most elegant and refined wine that shows another side of the Barossa. Largely traditional winemaking with gentle crushing, fermentation in open vats for three weeks and then pressing to Fresh barriques for 15 months. CAB 20: 92 pts NEAL MARTIN (Vinous). Dark ruby red in colour, this vintage has a vibrant bouquet of ripe red berry fruit, cassis, vanilla pudding, and a hint of dried herbs. The pallet is soft and rich. The tannins are round and gentle, while the natural acidity keeps the ripe fruit in check. Savoury notes of cocoa and cloves add character to the bright red strawberry and mulberry flavours which linger into a long, luscious, juicy finish. Drink 2023 – 2035.  

Terrasse is a seamless, skilfully blended cuvée of Chenin Blanc with 54% Chardonnay, Sauvignon Blanc, Roussanne, Viognier and Marsanne. Barrel-fermented and aged in older oak, it's floral, spicy and intense, marrying citrus, pear and clementine flavours and a touch of tannic grip. 2023-28. Gigantic concentration of black cherry and black raspberry fruit, plus a staggering mineral freshness in the finish that may be too much for some, but I find extremely exciting. The finish is as long as the universe is wide. Drink from release."
