It’s a wonderfully detailed wine, with more savoury than sweet elements that befit its maturity. Great length and balance throughout; the bead still has ample intensity and accentuates the creamy tones but also brings a lift of vitality"

Winemaking
One of our most rare and exquisite wines, the Late Disgorged Blanc de Blancs is an exercise in patience and discipline. Originally released at six years as our vintage Blanc de Blanc, forty dozen is held back to be released at ten or more years of age. This wine demonstrates the incredible ageing potential of Tasmanian-grown chardonnay and the delicious rewards of extended time on yeast lees possible exclusively with the traditional sparkling winemaking method of bottle fermentation. 100% chardonnay.
The grapes for this wine were whole bunch pressed, wild fermented followed by full malolactic fermentation and tiraging in October 2014. Ten years aging on lees and a subtle dosage of 3 grams allows the elegant flavours of the fruit to shine through. All our sparkling wines are made in the traditional method, 100% estate grown and made.
